I'm not ambitious, I'm just a little itious.

I have been a bit over ambitious with all I've put on my plate this week. My professor just e-mailed be about doing a presentation on Tuesday [yeah, it's Saturday] on renal tranplantation for my medical nutrition therapy class. But hey, one thing I've learned in my college career is that when there's a chance for extra credit, you jump through as many hoops of fire as you need to. That's just a tiny piece of my mile long to do list.
[is having a mile long to do list even mean anything? I mean, it really depends on the font.]

Anywho.
I want to share a tasy recipe with you!
You need fish, I used talapia because we are college students afterall, and loads of veggies.
Put some olive oil in your pan and sautee minced garlic in that. Plop in your fishies [2]. Squeeze in some lemon juice and sprinkle in some itallian seasoning. While it's cooking, chop your veggies. I used zucchini, onion, green peppers, and carrots. when you flip over the fish, throw in the veggies and fresh torn basil [chopping destroys some of the flavor] and cover. You might need to stir a few times. I also steamed broccoli on the side.
Then you eat it all and it's delicious.
And you feel good about yourself.
Then around 8:00pm you decide you need a treat and run off to the icecream shop for some goodies. Then you eat way too much sugar your belly aches. But hey, it's cool. Your healthy dinner will counteract all the sugars and fats you're ingesting. Promise. I'm a nutritionist...I should know.
I'm lying.
random: Last year I went to the chocolate festival with my now hubby. They was a sign saying if you're afraid of the calories in chocolate you can store them in a high place, such as on top of the refridgerator. Calories are afraid of hights and will jump down, leaving you with calorie free chocolate. I don't know. I say it's worth a shot!

p.s. have you heard of http://www.eatingwell.com/? It's the bomb? I just printed off like 6 mouth watering healthy recipes! Imma let you know how they turn out, but in the mean time you should do the same and we can be friends and exchange cooking successes/failures. I will probably have more of the latter.


ALSO, is it too early to listen to CHRISTMAS music? I didn't think so
ALSOOOOO I came home from the store yesterday ridiculously excited. Clint asked why. "TODAY IS BASICALLY CHRISTMAS!!! AVOCADOS FOR 25 CENTAROOS!!!!"
It's the simple things in life friends.

Where did you find avocados for that price??? Also, I need to check out that website! It's a goal of mine to eat healthier...it's not a strong suit :)

That is a great price on avocados! BTW, I am totally going to believe every word of that quote about storing chocolate in high places. I love chocolate, and if it is higher up, isn't that more of a work-out getting it down?! Extra calories burned=an extra piece! haha

Up in Flagstaff avocados are still more than a dollar! Sad story! I am super jealous of your .25 avocados! Also, I need to learn to like fish because that recipe sounds amazing! :]

I'm just catching up on you blog (been gone for a few weeks). I'm so sorry to hear about your panic attack. I've had my fair share, and they are absolutely terrifying. I'm glad, though, that despite the trials and fear panic attacks can bring your experience helped you to see things more clearly. It took me weeks to come to terms with my attacks...and, honestly, I still struggle to see the good in them!
