Your wish is my command

Thanks to Instagram, I take a lot of pictures of the delicious things I eat.
This is one of the things I posted.

A healthy sloppy joe meat with sweet poatoes.
YUM.
It has become one of Clint and I's favorite meals. And you know we have awesome taste.
A few friends asked for the recipes, and I want to start writing down my recipes anyway. Killing 2 birds, with 1 stone. Or if you're Chuck Norris, killing 2 stones, with 1 bird.

Don't worry, It's really easy!

You will need:
1 lb lean ground beef (I use at least 90% lean)
1 bell pepper- chopped
1/2 onion- chopped
2 roma tomatoes- chopped
BBQ sauce
Sweet potatoes (it's up to you how much you want)
Ketchup
1-2 Tbs flour
water
Montreal steak seasoning and bread (optional)

Start with the sweet potatoes because they take the longest. Preheat your oven to 375 while you wash the potatoes. At first, I used to cut them into wedges but that was too hard. I decided disks are easier. And the thinner you slice it, the quicker they cook. Try to cut them all with about the same thickness. Cover a baking sheet with tin foil (trust me, you do not want to scrub that pan) and place the disks on the sheet. Put the bigger ones on the outsides so they'll cook better. Technically you can put olive oil on them but i omit the fat and just use a little salt and pepper :) How long you cook these depends on how soft or chewy you want them. I usually stick with about 25-30 mins. THEY ARE SO GOOD!

Now for the meat! First chop your veggies. I like them in small pieces but it's up to you. For the meat, over medium heat, crumble the beef into a medium sized skillet. Cook until the beef is about halfway cooked (this is when I add a few shakes of the montreal seasoning) and then add the onion and bell pepper. Cook until the beef completely cooked (technical, eh?). It takes about 10 minutes. Then add everything else! Haha, Basically all you do next is get the consistency you want. You'll usually need a little water to start, a few tables spoons and then a Tbs or so of the flour. Then add the BBQ sauce and Ketchup. Add about 1/3 C of each. Then just cook a minute or so until everything is heated. About this time your potatoes should be coming out! You can serve it over the potatoes, a piece of bread, or on a hamburger bun! No matter what it's delicious. Seriously you can't go wrong.

Modifications:
Gluten free: Since you don't add much flour any way, it's be super easy to get rid of it. You can substitute alternate flour like rice flour, or just leave out the water. It'll be a slightly different consistency but still delicious! And if there's too much water, just blot out with a paper towel.

Cut sugar/calories: instead of using the Ketchup and BBQ sauce you can use tomatoe sauce which you can sweeten with honey or a little sugar. can also add flavoring liek garlic if it'd be too bland for your tastes. But really, it's a pretty low calorie healthy dish as it is. Look at how many veggies you're getting! And if you're feeding pickier eaters, a lot of them are hidden in the meat. You can also add more veggies of course. Mushrooms or Zucchini work well! I try to make it so it's about half veggies and half meat. Plus you get the sweet potatoes. Winning.

Sounds good right?! And super easy! Takes less than 30 minutes! It gives both of us 2 or 3 full meals too! We <3 leftovers! And heaven knows we can eat...
